Plantain pie is a kind of snack which is made same process with meat pie but with a different recipe.
- Ripe plantain(6)
- Fresh pepper
- Pumpkin leave (ugu)
- Vegetable oil for frying
- 3 large eggs
1. Wash the plantain,peel and boil it for 20mins or less until it’s very soft.
2. While boiling the plantain, make your scrambled egg (fry egg with the ugwu, pepper, onion,maggi and salt) just normal way you fry your egg and keep aside.
3. Take the plantain out from the pot after 20min or less if the plantain is soft enough and mash it to form a smooth dough. allow to cool.
4. Take a small amount from the dough, roll out neatly and fill in the fried scrambled egg at the middle.
5. Close it and press it with a fork to key d edge forming meatpie shape. do same for the remaining dough.
6. Heat oil and fry all inside till you get your desired golden brown color.
NOTE: It’s very important u use very ripe plantain for it to come out well.
